It's a crab! But wait, on closer inspection you realize it isn't!
The true source of the crab in your sushi, the imitation crab looks like a crab but is actually a type of osteichthyes or bony fish. Flattened out like a flounder with eyespots faced up and strange claws formed from their forward fins their legs do work but are unable to support themselves on land, subject to crawling on the sea floor and eating debris. They mimic crabs and hide within their population.
Also, they are delicious.

Imitation crabs are prey, and run from combat. Their claws are ineffective weapons.
